"A LOW ENERGY PROCESS FOR DEHULLING OF MUSTARD SEEDS"

Abstract The mustard oil derived in its present form by expelling hulled mustard seed is consumed in large quantities in the country. The basic features of this oil is its dark colour and pungency, which though prefer by many, or is not liked by many others. The oil cake from such operation is used mainly as cattle feed. There is a possibility that if the hulls could be removed from the seeds, the oil from such seeds will be superior, the oil cake can be converted in to human food and other uses and may by- product derived from the process thus adding a very high value to the produce. The existing processes of dehulling the mustard seed are in efficient and consume much energy and thus out of reach for most of the oil millers. The low cost low energy process developed provides solution of many other problems mentioned above and is expected to be very useful when adopted in large scale. The process is simple as it works on the process of grinding, boiling and separation of meal through floatation technique. The cost of dehulling comes out Rs 0.6 /Kg.
Full Text 3.1 Introduction-The mustard/rapeseed is one of the major oil seed crops of the country and is second to the groundnut as a sauce of Edible oil. The mustard oil is preferred for its pungency and is much liked by the people in the northern and North Eastern part of the country. Because of the presence of hulls in the seed coat which imparts the colour to the oil and also a major part of pungency because of bitter compounds, present in it, a need has been felt to dehull the mustard seeds before extracting it's oil. It has also been observed that after dehulling the seed, it will be possible to convert non Edible oil cake mostly use as an animal feed in to Edible one and also derive many other by-products from the cake. Thus it was considered desirable to develop a low cost and low Energy process for dehulling the seed.
3.2 Problem-The dark coloured mustard seed when expelled in an oil expeller produce a some what dark coloured oil which has some pungency and although is liked by many people but is some what not preferred by others. Apart from a large consumption in the country in its present shape, It is possible to convert it in to a better oil which is semi transparent and is largely free from pungency and resembled like a salad oil further the oil cake derived from expelling from dehulled mustard seeds which is hitherto use as an animal feed can be value added by developing may useful products- mustard sauce being one of them. The technique so for adopted for dehulling of mustard seed are very cumbersome and costly. In order to cut down the cost of dehulling the seed whose advantage have been well recognized, there was a need to develop a low cost process by developing a simple technology.
3.3 Advantages-The advantage of the new process develop over the existing practices is that, it dose not involve any complicated process uses very few equipment which are simple to use and can be adopted by even a semi- skilled person. Further the by- products derived from the dehulled seed deoiled cake are many which add value to the product so much so that the value addition goes by many folds. It adopted on wider scale this process has potential to revolutionize the oil milling Industry.

3.4 Prior technique-Removal of the hull from the seed is a very difficult process. So for the techniques adopted for this purpose involve complicated equipment and is a high consumer of Energy.
3.5 Description of the present invention-The new method of dehulling the mustard seed developed by CIPHET Ludhiana consist of following process. First the seeds are thoroughly cleaned by removing all the extraneous and foreign matter. There after the seeds are dried to a moisture less than 4%. The dried seed are ground to less than 1mm particle size. The ground meal is boiled in water at 100°c by keeping the proportion of 6-8 litres of water per Kg of meal for duration of 5 minutes. During the boiling process the material is constantly stirred ands the free-floating hulls are constantly removed. The slurry is then poured in to the setting tank equipped with taps at regular spacing. The material is allowed to settle for around one hour duration. The meal is removed from the top tap and filtered in muslin cloth and the filtered cake is washed with clean water to remove bitterness. The process is repeated till all the fully dehulled meal is removed. The dehulled meal, in form of slurry, can be dried as per requirement.






We claim:
1. A process for low energy dehulling of mustard seeds by: -
♦ Cleaning the seeds thoroughly by removing all the extraneous and foreign matter.
♦ Drying the cleaned seeds to moisture less than 4 %.
♦ Grinding the dried seed up to a less than 1 mm particle size.
♦ Formation of slurry by boiling grinded seed in water at 100°C by keeping the proportion of 6-8 litres of water per kg of meal for duration of 5 minutes.
♦ Removing the free-floating hulls from slurry through constant stirring during the boiling process.
♦ Settling the hull from slurry in a settling tank equipped with taps at regular spacing for duration of one hour.
♦ Separation of lighter oiled floating meal from the top of the settling tank using muslin cloth.
♦ Washing the filtered cake with cleaned water to remove bitterness.
♦ Drying the dehulled meal in form of slurry to get dehulled oiled mustard powder.
