| Abstract | A method for preparing a novel enzyme Enzyme Preparation For Improved Baking Quality which comprises of: . a. preparing an inoculum ofRhizopus sp., b. preparing an inoculum of Aspergillus sp., c. mixing the grown inoculum ofRhizopus sp. d. sterilizing a solid state nutritive matrix, e. mixing the said sterilized solid state nutritive matrix with a mixture of inoculum consisting ofRhizopus sp. and Aspergillus sp., f incubating the said inoculated solid state nutritive matrix for 4 -7 days at 25 - 35°C g. extracting the fermented matrix followed by filtration, h. concentrating the aqueous extract, i. spray drying of the concentrated aqueous extract to get the enzyme preparation. |
