| Abstract | This invention relates to a process or producing decaffeinated high purity polyphenols from green tea leaves. Polyphenols from green tea leaves are of high antioxidant activity. Caffeine present in tea, exerts harmful effect and must be eliminated from tea extracts. Water soluble polyphenols are extracted with water from dried green tea leaves. This aqueous extract is treated with ethyl acetate to remove polyphenols therefrom. This ethyl acetate extract is concentrated and washed with water to extract water soluble polyphenols therefrom. Aqueous extract is repeatedly washed with chloroform to remove caffeine therefrom. The aqueous extract is concentrated to obtain decaffeinated polyphenols. |
