| Abstract | The presebt invention to a process for sterilizing and enhancing shelflife of biological material using supercritical fluids. This process combines one or more sequences of pressirisation-depressurisation using supercritical fluids. This sterilization is accomplished without adversely affecting the delicate flavors in foods with minimal changes in texture,aroma,and color. The process involves subjecting the biological material to sequence of presuurization-depressurization at specified pressure and treatment time based on the nature of the biological material to achieve sterilization with desirable characteristics. The process parameters are adjusted based on the biological material. The temperature of the sterilizer may vary from 42-55 degree C,the pressure may be in the range of 9-27 MPa. Total treatment time may vary from 15 to 90 depending on the biological material being processed with shelf life enhanced to at least 90 days without using chemical preservatives. |
