PROCESS TO PREPARE COFFEE SEEDS FROM THE COFFEE BERRIES

Abstract The present invention provides a method for preparation of coffee seeds to improve the quality of the coffee as well as to produce coffee wines. The method for preparing coffee seeds from coffee berries to improve quality of coffee, said method comprises steps of pulping coffee berries along with water; adding sugars and known yeast in the separated pulped material,fermenting the pulped material; separating seeds from pulp of the pulped material; and washing and drying the wet coffee seeds. The coffee seeds dry faster and very less amount of water requires washing the coffee seeds. The pulp separated from the coffee seeds is fermented further to produce coffee wine.

THE FOLLOWING SPECIFICATION DESCRIBES THE INVENTION.

FIELD OF THE INVENTION:
The present invention relates to a process to prepare coffee seeds from the coffee berries.
BAKGROUND ART OF THE INVENTION
Generally, harvesting of coffee seeds starts from November and ends in February in India. The coffee berries are collected in day time and are pulped in the evening. For pulping, coffee berries are fed to pulping machine along with water where coffee seeds are separated from pulp and husk, washed, and transferred for drying. It is observed that even after washing with force, mucilaginous coating around the coffee seeds retained. Further, mucilaginous coating acts as an interface and retains water resulting in delay in the drying process. This results in inferior quality of the seeds. Further, as there is no use of the husk and pulp after removal of seeds, they are treated as waste. Husk is disposed in a pit and pulp along with water is drained off. Further, 2.5 liter water per 1 kg of berry is required for pulping and about same quantity of water is required for washing for example 1000Kg coffee berry will require 2500 liter water for pulping and 2500 liter for washing. It will produce approximately 400Kg wet seeds and remaining will be pulp and husk.
DESCRIPTION OF THE INVENTION
It is an object of the present invention to provide a method of preparing coffee seeds from coffee berries which solves shortcomings of the current process.
Another object of the present invention is to reduce quantity of water use for washing of the seeds.

Further object of the present invention is to provide an eco friendly process for preparing coffee seeds from coffee berries.
According to the present invention, method of preparing coffee seeds from coffee
berries comprises steps of pulping coffee berries along with water; separating husk from the pulp; adding sugar and known yeast in the pulp; and separating seeds after few hours from the pulp and drying the seeds; wherein the seeds dry faster as the seeds are free from mucilaginous layer. The sugar 0.1% to 10% is added in the pulp. The seeds are separated at least after 12 hour.
According to an embodiment of the present invention, the seed free pulp is fermented further to obtain coffee wine. The pulp is fermented for up to seven days or more.
According to further embodiment, the separated husk is treated with yeast and mixed with separated pulp. The said mixture is then fermented to obtain coffee wine.
According to the present invention, water require to wash the seeds is 10-15 liter per 30 kg of seeds. Further, seeds dry in just 72 hours thereby improving the quality of the coffee. Moreover the process is environmentally friendly with no wastages.
The yeast paste obtained after fermentation according to the present invention
can be used as fertilizer with or without husk.
Example 1:
1000kg of coffee berries fed in pulp machine with 2500 liter water. The pulp
obtained from the machine was separated and collected in a tank. Then 175 kg of sugar and yeast was added. The entire mass is kept overnight and coffee seeds are separated and washed with water. The quantity of water required was

350 liter. The seed were free from mucilaginous and also dried in 63 hours. The quality of the coffee was better than the coffee made from seeds obtained by conventional process. The pulp after separation from seeds was further fermented to obtain coffee wine. The coffee wine was 2000 liter. The yeast solids separated from the coffee wine is good as a fertilizer.
